Make This Now: Marinated Blue Crab Claws

Summer’s the perfect time for ocean-fresh seafood, and there’s perhaps nothing more delicious than the sweet meat of blue crab claws after a day on Lake Martin. Check out Executive Chef Rob McDaniel’s quick and easy recipe.

Quick tip: Save the claws the next time you have a crab boil, or purchase them already peeled from a local market.
Marinated Blue Crab Claws
Ingredients:
1 lb. cooked blue crab claws
Zest of 1 lemon, 1 lime and 1 orange
Juice of 1 lemon, 1 lime and 1 orange
2 bay leaves
2 Arbol chiles (if not available, try cayenne pepper or pequin chiles)
1/4 cup of good quality olive oil
Pinch of salt and fresh black pepper
How to prepare:
Combine all ingredients in a glass mixing bowl. Toss well to ensure the claws are fully coated. Marinate for 10 – 15 minutes before serving.
