Foraging in Russell Forest

Spring is here and with it comes more than just flowers in bloom, but wild edibles too – from dandelions and strawberries to chanterelle and morel mushrooms. Rob McDaniel, Executive Chef at SpringHouse at Crossroads, has strong relationships with several foragers who are often found digging in the dirt of the north Georgia mountains – and soon for morels in Russell Forest! McDaniel hopes his forager friends may also happen upon some wild strawberries in Russell Forest.

If you’re out and about exploring Russell Forest, see if you can spot any of these local edibles – zucchini blossoms, pea tendrils, wild fennel, day lilies, wild onions, ramps or garlic. If you’d rather not get your hands dirty, simply head over to SpringHouse for something seasonal and truly delicious!
