Drink This Now: Split The Check

SpringHouse Restaurant’s resident mixologist Will Abner is always on the hunt for the next great seasonal cocktail. As temperatures cool down outside, Will offers a bourbon-based drink, highlighted by a French aperitif, called Byrrh (pronounced beer), which will warm you up – inside and out.
Originally marketed as a health tonic, byrrh has a slightly bitter, tart cherry flavor with notes of cashew, pomegranate and dried cranberries. In cocktails, byrrh acts subtly, like a good vermouth.

Split The Check
Ingredients:
2 oz. Buffalo Trace bourbon
1 oz. Fresh grapefruit juice
1/2 oz. Byrrh
1/4 oz. Simple syrup
How to prepare:
Combine all ingredients with ice and shake. Strain into a chilled coupe or martini glass and enjoy.
